PROOFER


Precise control of temperature and environment is essential for consistent product in hand shops or fully automated plants. Slow, low temperature fermentation can yield the most favorable products. Our fermentation units can maintain virtually any temperature and humidity under a variety of conditions.

OMEGA’s roll-in proofers are constructed using two inch thick stainless steel wall and ceiling panels that are foam injected along with the door to ensure that your energy stay inside the box. All models are equipped with heavy-duty welded stainless steel (304 series) door hinges, to prevent door sagging.

The Controls provide a gentle heat and humidity curve preventing over-shoot so you’re not pouring water down the drain. The control is mounted conveniently on the top level of the door and has large Microcomputer displays for time, temperature and humidity so your operators can keep track of every step of the proofing operation.

Proofers are available in single door, double door and triple wide models in depths starting from 1 rack to even more than 30 racks. All models assemble using an aluminum construction design, minimizing installation time.

DECK OVEN


The OMJ series deck ovens are available in two or three pans widths with decks from 1 – 4 decks high. Equipped with top and bottom heat controls independently, top heat control applies wire heater, bottom heat control applies 3mm thickness plate heater. Steam and venting ensure that the OMJ series deck ovens prepare quality artisan breads and pastries.

Strom Convection Oven


OMEGA storm convection oven is outcome of China and Korea Joint Technology. Convection cycle hot wind can get the optimal baking fire. The removable parts in the interior and on the sides makes cleaning and maintenance absolutely convenient. Baking the refrigerant paste can complete automatically from refrigeration to baking.
The powerful automatic time steam can control the volume of the steam according to the baker’s set program. Lower energy consumption.
